By freeze-drying the horsemilk all vitamins, minerals and other active substances will be preserved. This is possible because with freeze-drying the milk is frozen and brought under vacuum. With spray-drying, another way to dry products, the milk is being heated whereby vitamins and other important substances will get lost.

What is freezedrying?
Freeze-drying is a way to preserve food. During this process the water is removed whereas it is frozen remains, by means of a process which is called sublimation. Horsemilk is being placed on scales and will be frozen deeply. After being frozen these scales are put into the freeze-dry machine, in a cooled vacuum space, where carefully and controlled heat will be added.
By this all the present water in the shape of ice will be evaporated, without going over to the shape of water first. In a so called ‘run’ sixty litre of deeply frozen horsemilk is being freeze-dried. The result of it is approximately ten percent solid substance what is called horsemilkpowder. A big advantage of this method of preserving is that all the vitamins and proteins remain intact. That is why the horsemilk from horsemilkery ‘De Lage Wierde’ is being freeze-dried on its own company.
